Looks like

A walnut-sized salivary gland under the lower jaw, felt under the angle of the jaw.

What it does

Produces most of the saliva at rest.

Keeping it well

Stones most often form here: swelling under the jaw when eating. Hard persistent lumps need an ENT check.
